Easy Browned Manoomin & Quinoa

Ingredients:

4 T butter

1 cup washed manoomin

1/2 cup red qunioa

2 3/4 cups water

Directions: In a large bowl, wash your manoomin with cool water, replacing water until it is clear. Drain water and set aside. Melt 4 T butter in a pan over medium-high heat and add washed manoomin and quinoa.

Stir until a mild browning occurs (takes about 2 minutes).

Add water and bring to a boil. Cover, leaving the lid slightly ajar, and simmer for 20 minutes. Add a little more water if it happens to all boil out before 20 minutes is up. You should have a small amount of liquid remaining after the 20 minutes. Remove from heat and stir. Cover and let sit 10 minutes. (I like to drain any excess liquid at this point.)

Season as desired. It’s very nutty and flavorful as is, but I like it with salt and garlic powder. Try browning minced raw onion along with the manoomin and quinoa, or mixing in beans or protein of choice when it’s done. (Shown is white northern beans). My 20 month old toddler loves this dish!
